When to convert to low dex (Assassin)

If you're talking about equipping something then removing that stat to lower it that won't work, the item will stay equipped, but its stats won't transfer to your character.

This is kind of the same thing but with a pet equip


Do you notice how my pet's equip is a brighter red? Its because my pet isn't out.
So when that happens the item is still equipped but its stats that are on the item in this case speed.

Won't get transferred to my character to get that +10 speed boost in stats.

The item would need to be able to be of use, another example would be if you used Maple Warrior equipped an item and Maple Warrior timed out your item would be "unequipped" but still be in your equipment inventory as if its equipped using Maple Warrior again would enable your item to be used while its there, if that makes sense.

Definitely dexless up to level 64 because of maple scanda.
After that it depends if you have any target claw to equip and raise your Dex accordingly (if you level through a certain phase quickly, it might not matters to upgrade your claw during those intermediate levels).

If you obtain good dex gear in future and no longer need that much base dex, you can always reset your Dex back to Luk, so no worries.
