It depends on the equips you wish to use/planning to acquire. The more DEX equips you have, the less DEX you'll need to add.

Keep in mind that you will need to have 1 AP of DEX for every level if you want to wear normal pirate equips. For example: level 90 gear requires 90 DEX.

I currently have my DEX base sitting at 50 which does the job for me just fine, I'm planning to keep it at this number for as long as I think it's comfortable.
It comes down to preference really and how much you're willing to invest/or can in DEX gear.
Though I'm sure I could speak for any brawler, that going above 80-90~ DEX is a bit overkill.
Sure DEX is important but sacrificing too much strength is just gonna hurt your overall damage output in the long run if you're planning to go all the way~

Quick little tip though, you could do what pieter said but if you're just starting out and don't have much to fund yourself with I wouldn't advice going this route. But that's completely up to you
