What Exactly Do Stats Do? (Details Please)

I understand the basics. STR=damage, etc. But I am looking for any information on the more intricate details of how stats work. I noticed as a level 28 warrior, with 60 DEX, 8 LUK, and accuracy of 65, I cannot hit Jr. Necki, Jr. Boogie, or Drake.

Does Level affect my accuracy more than DEX?
How does LUK affect my accuracy? (I noticed my accuracy went up when I equipped the Bamboo Hat. It has LUK+3. My base LUK is 5.)
I assume DEX provides more accuracy than LUK, so I'm not putting any points in LUK.
How exactly do stats work differently for each job?

I appreciate any help and hopefully no one responds with "just make dex 2x your lvl bruh."

Apparently my level is the most important stat for determining hit chance. No wonder I can't hit a level 50 drake when I'm level 20-something.
